    Boil SOME of the potatoes. Cut into thin slices. Dunk them in eggs, then cover with bread crumbs and lots of cheese. Either bake at 350 degrees F for 8-11 minutes or fry them in oil. You can also make cheesey potato wedges. You boil the potatoes. Cut into wedges. Rub cloves of garlic on it and spread on a baking pan cheese all over the top of the potatoes and bake at 375 degrees F for 13-16 minutes.

    This is my favorite:

    You can boil the potatoes HALFWAY and then peel the skin off. Cut the potatoes into 4-5 equal pieces. Smother each one with garlic, butter, cheese and basil. Before adding the cheese, chop up rosemary spriggs and entirely cover the potatoes with them. Rosemary and potatoes go SO well toegther. Then add the cheese and then the basil on top. Drizzle just a tiny bit of olive oil on each potato and bake at 350 degrees for about 15-17 minutes or until the tops of the potatoes have completely melted cheese.

    Potatoes au gratin is an easy one to make... it does have to bake quite a while though.

    Wash and thinly slice your potatoes then layer them in a baking dish. Pour about a cup to a cup and a half of heavy cream [it's got to be heavy cream to get the right texture].

    Top with cheese or your choice then cover with foil and bake for an hour and 20 minutes at 350 degrees. You can take the foil off for the last 15 minute and if you like you can top with bread crumbs at that time.

    Hash browns are always an option. I dice the potatoes fairly small and then cook them in olive oil in a frying pan. Don't turn them too much or they won't get as crispy. Toward the end of cooking you can add herbs, onions or garlic. If add them too soon the potatoes don't crisp up but if you add them at the end it turns our really nice. At this time you could add beaten eggs and cheese then pop it in the oven at 350 until the eggs cook. Then you end up with a frittata.

    You can also make potato dumplings with mash potatoes, flour and eggs. The Norwegians make a version stuffed with salt pork [I usually use sauteed onion and bacon instead]. The Italian version is gnocchi and you can serve it with your favorite pasta sauce.

    I also like to make a potato salad with sour cream, fresh dill, boiled eggs, capers, greek olives, celery and salt and pepper.

    Salad Nicoise is also a good French potato salad. You can use diced boiled potatoes, cooked green beans, Nicoise olives, dress with olive oil and balsamic vinegar and top with albacore tuna and sliced hard boiled egg.

  • Recipe for YUMMY POTATO CURRY:

    Ingredients:

    Potato - 10 medium size (cut into small pieces without skin)

    Onion - 4 medium size (cut into small pieces)

    Cumin seeds - half tsp.

    Turmeric powder - quarter tsp.

    Red chili powder - half to 3/4 tsp.

    Salt - to taste

    oil - 5 to 8 tbsp.

    Coriander leafs - few for garnishing

    Method:

    Take a pan put oil, when it gets heated put cumin seeds & turmeric powder. after half a minute put onion in it and a pinch of salt. fry it till the onion becomes light brown.

    Then add chopped potatoes, red chili powder, salt. Mix well.

    Cover the pan with a lid (after 10 minutes, fry the vegetables again and cover it with lid). Cook it till the potatoes are done. Now garnish it with coriander leafs.

    YUMMY Potato curry is ready to eat as it is or with lightly toasted bread.

    Note: You can do the same curry with boiled potatoes also. But it will taste different.

    Make baked potatoes. Just put aluminum foil around potato and bake until soft. Then cut open and add whatever you like. Such as cheese, sour cream or just butter and salt. It's another option oppose to frying the potatoes. Well hope that helped.

    Baked potatoes. You can eat one for lunch each day.

    Years ago there were eating places that served only large baked potatoes with items to put onto your potatoes such as sour cream, cheese, bacon, onions, ham, etc. This makes a great lunch.

    Butter, salt, pepper is all I need, but sour cream is good too.

    Here is a quick way to bake them in your microwave:

    Wash and dry the potatoes;

    Wrap them tightly in microwave plastic wrap;

    Cook on high for 7 to 8 minutes in your microwave.

    I love cutting them into wedges and making fries. Just sprinkle with salt, pepper, and olive oil. Bake in a 425 degree oven until brown and crispy. Delicious! Seasoning salt is tasty as well.
