What vegetarian dish can I make from about 8 oz. of sliced red cabbage?

It's in strips. I could throw it in salad, but I'm looking for something more creative. Any ideas?

I was going to say a salad haha, or you could put it in a stir fry. That's always good. Or you could put it in a cole slaw.

I also like to make sweet and sour red cabbage. Just take the cabbage, some butter, peeled/sliced apples, red onion, red wine, vinegar, lemon juice, whole cloves, brown sugar, and a bay leaf. Melt the butter, saute the apples and onions and then add the cloves, brown sugar, cabbage, red wine, and bay leaf. Simmer it for about an hour or so, add any remaining ingredients and done! It's really good :] Oh, and add some extra melted butter in the end. Mmm, really good for a side dish or something.

Or you could braise it, that's good too. Just take the cabbage, lemon juice, extra-virgin olive oil, crushed red pepper, salt, and pepper. Heat the olive oil then add the cabbage. Cook it on medium for a little while until it starts sizzling, cover it and put it on medium-low. Stir it occasionally and cook it like that until it's tender. That should take about 6-8 minutes or so, I think, not good with times. Stir in the lemon juice. Add crushed red pepper, salt, and pepper to taste and it's done. Delicious!

Hope you find some of these ideas to your liking :)

Even with that amount I would make a braised red cabbage, I make an all veggie one with onions, apples, brown sugar (unrefined), caraway seed, bay leaves and a splash of cider vinegar, it is good hot and even cold as a salad, even made a tofu schnitzel once and fooled a carnivore friend int thinking it was a real veal cutlet, and she vacuumed up the red cabbage, red cabbage is actually better for you than white/green types.

If you have any other cabbage and carrots a nice tri colour cole slaw would be good - my mouth is watering thinking of it.

It would be great in a stir fry for colour.
