i remember when i used to do that too. there's two reasons that i can think of:
first, its because you're either under or over rotating. when you land, your blade has to be facing the same direction as your direction of travel or it will get stuck, and our natural reaction would be to hop ourselves into the right position so we'll continue the slide back. ask a friend or coach to watch your landing to see if that's the case.
second is you're going too slow or you're not using your arms and leg to help pull you forward on the jump. without enough speed, you'll simply go up, and down, same with not using your body to pull forward, like a waltz jump. you wont have that extra force to move backwards so when you land on your toepick, you continue to spin a bit and you end up hopping yourself out of the spin into a forced landing position glide. when you do the axel, go back and look at your jump mark. how long of a distance is your jump going? if your jump distance is less than lets say two blade lengths, work on the arms and legs for the takeoff and more speed. is there a skid / stop mark at the take off? if so, work on taking off off your toe, not the edge of your blade. Either way, you want that forward momentum taking off so you'll have it on the landing.
i can't really help you tell which one you're doing since i can't watch you skate, however, ask someone to spot you and see if you're doing any of the above. hopefully this helps.

I hate it when that happens! I'm having issues with landing mine (of course, I've only been working on it...around 6 months now?) and I'm an on/off negative thinker about it. I just have to kick myself in the butt and shake myself out of it. Are you under-rotating it because you're nervous? My coach always says that who cares if you fall down, do it anyways, just get back up again. And honestly, that's why I've gotten a lot of things. :) Maybe try that? Also, it seems your technique must be good, for multiple coaches to say it's mentally only, but double-check. Are you "stepping up"? Are your arms going at the same time as your legs? Are you crossing your feet? (If so, properly?) When you land, are you letting your arm swing around and open up? Also, if you're nervous, maybe try with the harness if you haven't already. I've only tried it once with a jump, and it was just messing around with Waltz jumps to get the feel of the harness. My God, can your coach lift you high in those things! xD They make me really uncomfortable spinning, but jumping...maybe it'd help? I've never tried it on my Axel, and it's an individual thing, but it's worth trying if you haven't already. Also, try giving your Axel a break for a while. Sometimes I find that I'll give something a rest and then come back to it and do 10x better because of it. Try various entrances to the Axel. I know of 5: from a standstill; from back pumps; from back pumps (one foot) on a circle; from FO 3s; and from back crossovers. The more speed you have, the easier it will probably be. For the back crossovers, only go as fast as you feel comfortable. But it's a pretty cool feeling when you do. :) Oh! And on a last note, try some waltz jump exercizes that may help. One is a waltz-loop. Another is a waltz jump (from a standstill) and then land with your feet crossed, both toe-picks digging into the ice (believe me, you'll fall over if you don't lol and you're supposed to anyways). Waltz-backscratch is good. An alternative to that is doing a waltz jump, landing on your toepick (feet crossed, like you're rotating in the air) and jump up and down on your toepick while rotating. Jump up and down/rotate 3 or 4 times. Good luck! :)

You should be landing, fully rotated, on the toepick and using your free foot to pull yourself onto the back outside landing edge in a checked position. Sounds like you are underrotating your jumps or landing on the rocker/edge instead of the toerake.
Point your landing foot toe in the air, hold the backspin position and land with your free foot crossed in front. THEN use the free foot/check to get the landing edge.

It might help if you get a little more speed going into your jumps. You don't need a ton cause you still want to be able to control the jump, but a few extra crossovers could be helpful.
