Ratatouille! This is one of my favourite dishes, and I'm not even vegetarian, nevermind vegan. The recipe linked below is excellent. It calls for "chicken or vegetable stock"; obviously you'd want to use vegetable. Everything else in the recipe is vegetables.
You could also use seitan in place of meat or tofu. It's made of wheat gluten, and has a much firmer texture than tofu. You can buy it, but I like to make my own. It's cheaper (all you need is water and whole wheat flour) and fun. It doesn't have much flavour of its own, so you can flavour it with different spices, marinades, etc.

There's a huge number of choices. Just concentrate on the veggies, and if you want the consistency of tofu or meat or something like that, then concentrate on beans or lentils. There are veggie soups, of course. But, don't forget the vegan version of beans and rice with tons of herbs or spinach or whatever sounds good. Actually, broccoli and other assorted veggies are good with rice without the beans. Beans and potatoes or cauliflower can be put into a food processor with some olive oil, homemade bread crumbs, and spices and then formed into patties and either baked or cooked in a skillet. Of course, there are always salads and slaws (with a vinegar dressing instead of mayo) with added nuts for protein. Biscuits can be made with flour, water, and olive oil or vegetable shortening. Gravy can be made with water instead of milk and olive oil instead of butter. There are also vegan products on the market that are based on processed soy, so they don't taste like the typical tub of tofu. Really, the possibilities are endless.

Some people just don't like tofu or the idea of tofu and I understand it took me a long time to find what tofu dishes I like.
Here are some great recipes that are tofu free but not all are soy free. If you want soy free just substitute rice milk or other alternative milk for it.
