Crock pot roast is awesome! And yes, you'll need some liquid - about 12 ounces for a 2 or 2.5 pound roast. Beer is best, though beef broth would also be good, and I've even used Dr Pepper successfully in the past. Definitely put the carrots and onions at the bottom of the pot, then the liquid, then the meat. If you add potatoes, put them in last - if you put them on the bottom, they'll absorb too much liquid and turn to mush. Carrots are tougher; they can take it. And season the meat before it goes in the pot. Even a packet of onion soup mix is good for that.

Ribs in sauce.. Split the ribs into 2-3 bone sections, add diced onion and garlic, some bbq sauce and a can or bottle of beer. Let simmer until the meat starts to come away from the bone. Serve with rice or potatos on the side and some coleslaw.

    Pulled Pork Sandwiches

    Ingredients

1 (14 ounce) can beef broth

    3 pounds boneless pork ribs

1 (18 ounce) bottle barbeque sauce

    Directions

1.Pour can of beef broth into slow cooker, and add boneless pork ribs. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks. It will seem that it's not working right away, but it will.

2.Preheat oven to 350 degrees F (175 degrees C). Transfer the shredded pork to a Dutch oven or iron skillet, and stir in barbeque sauce.

3.Bake in the preheated oven for 30 minutes, or until heated through.

    Slow Cooker Cheesy Chicken Tortillas

    Ingredients

4 skinless, boneless chicken breast halves

1 (1 ounce) package mild taco seasoning mix

    5 1/4 cups Swanson® Chicken Stock

    2 tablespoons butter

2 (10.75 ounce) cans Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)

    10 fajita-size flour tortillas (10-inch), cut into 1-inch pieces

4 cups shredded Mexican cheese blend

Hot cooked regular long-grain white rice

    Directions

1.Place the chicken into a 3 1/2-quart slow cooker. Top with all but 2 tablespoons of the taco seasoning. Pour 3 1/2 cups of the stock over the chicken.

2.Cover and cook on LOW for 4 to 5 hours or until the chicken is cooked through. Remove the chicken to a cutting board. Using 2 forks, shred the chicken.

    3.Heat the oven to 350 degrees F.

4.Heat the butter in a 3-quart saucepan over medium heat. Stir the remaining taco seasoning, stock and soup in the saucepan. Stir in the chicken.

5.Layer half of the chicken mixture, tortillas, and cheese in a 3-quart shallow baking dish. Repeat the layer. Bake for 30 minutes or until the mixture is hot and bubbling. Serve over the rice.

Zucchini is commonly looked at as a plant, and in layman's parlance, of course, this is far more useful; however, by stringent definition, the zucchini is a fruit, being the swollen ovary of the zucchini flower.
