how can i get all of my candle to burn?

I've been buying these rather expensive candles and they burn right down the middle, leaving over half the candle unusable. Does anyone know what I'm talking about? Can anyone help?

That is called "tunneling" and even though the brand you're using is rather expensive, there are other brands out there that don't "tunnel" and leave a lot of wasted wax.

You need to burn them longer. When a candle is only lit for a short period of time, only a small area in the center liquefies. When it's lit for a longer period of time, the whole diameter of wax melts, and then re-solidifies at a lower, but even, level.
