It tastes fabulous! I don't know how to describe the taste though... I've never had duck. Hmm.. The meat is darker than white chicken meat but more fine than turkey. It has a taste of it's own and is excellent with gravy.
My father-in-law is obsessed with pheasant hunting, which is pretty easy where I live because they're so many of them. I see them EVERYDAY while driving to and from work. It's just a matter of time before I smuck one--hopefully not in the windshield.

When I had Pheasant back in the 80 s it was all dark meat. like duck. It taste like your eating a hand full of almonds. Now it has been altered (like chicken) to be pinkish white meat. With no taste. I would love to find the true pheasant meat, and have that taste again.

It's gamier by comparison to supermarket ducks and turkeys, but they would be similatr to a wild duck.
