Why is vanilla ice cream white when vanilla extract is brown?

Don't think about the details just eat it.

when you are working with an extract, you use a small quantity. The ratio of vanilla extract to cream is not close enough to turn the product brown.

vanilla extract is only brown when put onto the white color of the ice cream after that the brow color is diluted

they use ammonia hydroxide to kill all the e. coli bacteria and bleach it white (just like with ground beef - which they then re-dye red)

Because chocolate has dibs on the color brown.
