The whole quote ends with OFTEN GO ASTRAY.
It means that ... well.. basically, SH*T HAPPENS. Despite our plans, things screw up.

Burns used to be a farmer, and the poem from which the quote comes was written after he ploughed through a mouse's nest out in the winter fields. As the previous correspondent said, you can prepare for everything but the unexpected.
