For Vegan, my first and famous cookbook grew to become into the way all of it Vegan (and the different books interior the sequence - interior the backyard of Vegan and l. a. Dolce Vegan). i admire Heaven's feast besides, it fairly is vegetarian yet incredibly changed for vegan. I gravitate to Indian cookbooks. Many are vegetarian and omg - with nutrition that good, why might all and sundry not be veg*n.

My favorite is eggplant parmasiana. Someone in my church (I haven't figured out who yet to get the recipe from) makes a really awesome vegetarian tamale casserole and it's high on my list to.

My key thing with veg*n dishes is to stay the heck away from meat substitutes. If you do that most vegetarian food is pretty good, but things like tofu and gluten and soybeef are just plain nasty.

I like lots of veggie dishes! Most are no big deal, they just aren't made with meat or animal products so there is no need to substitute for it...which I think is the way to go.

I like grilled vegetables with olive oil and herbs, kebab style is nice, or slices

I also make this side with coined carrots, quick barley, and chickpeas. I usually flavor it with butter, salt and pepper. You can skip it or use olive oil to make it vegan. It is a creamy hearty side dish.

I like almond milk smoothies with frozen banana and some peanut butter or any frozen fruit.

You can do tomato based minestrone soup with veggie stock and shell macaroni

My mom used to garden and when the zucchini came in she would always leave some on the vine until they were big and fat. Then she did about half inch slices, dredged in flour, egg, and milk then country fried them, served it on a bun and dressed like a burger. with lettuce, tomato, pickle onion, and mayo. AMAZING flavors. I wasn't as crazy about it, but she did the same with eggplant.

There is also dips like hummus, bean dip, babaganouch, guacamole, etc. LOVIN those with pita or even tortilla chips. My fav of all the dips is pico de gallo. I make it in huge batches, then when I am done stuffing my face with chips, I use it as a flavor base for a lot of cooking such as tortilla soup, taco meat (I am a meat eater, you could use TVP or whatever you put in tacos) and beans or chili soup.

I also like whole wheat PBJ grilled up.
