That feeds a family of 4?

Update:

I want to spice things up maybe some type of casserole? What do you think?

This is what I make often for my family.

    MEXICAN TACO CASSEROLE

    1 1/2 lbs. ground beef

    1 onion, chopped

    2 cloves garlic, minced

    1 env. taco seasoning

    1 lg. bottle taco sauce

    1 can chopped chilies

    1 can refried beans

    1 can black olives

    1 bag Doritos, crushed

    12 oz. shredded cheese

    1 carton sour cream

Brown meat and onions, drain. Add next 5 ingredients and mix well. Put half of Doritos in greased 13 x 9 casserole dish. Top with meat mixture. Add olives and other half of Doritos. Bake 25 minutes at 350 degrees. Add cheese on top and bake 5 minutes more. Top with sour cream to serve. Serves 10 to 12. o_O

Step 1: Empty a bag of pinto beans onto a surface (I guess a 1lb bag). Sometimes there is a pebble or two hidden among the beans. Take those out (it doesn’t feel good to bite down on one of them—believe me, I’ve done it). Rinse the beans. I usually use a colander. Then let the beans soak in a large pot overnight. Use plenty of water since the beans expand quite a bit.

Step 2: Boil beans for a couple hours. I would say boil them for about an hour or so… basically until they are soft (make sure to keep on adding water). Then it’s time to add the stuff: garlic powder, cummin, salt, pepper… chili powder if you’re feeling daring (but not too much). This is where the experimentation is required. For starters, try 2-3 Tbs of garlic, 1-2 Tbs of cummin, 2 Tbs of salt (that might be a little much), 1 Tbs of pepper, and maybe 1 Tbs of chili powder (maybe less). Then let all that boil for another hour. You want the beans so soft that they are falling apart (it makes it easier to mash them later on).

Step 3: This is also a tricky part. After the boiling is complete, you need to empty out a lot of the water… but not too much or else the beans get really dry. For starters try emptying out the water so that only the bottom half of the beans are in water. Then the mashing begins. I use a potato masher. A fork will also work if a potato masher is unavailable… but that takes a lot more work. Mash until you get sick of it. The consistency of the beans shouldn’t be uniform—that’s only what happens at food processing plants.

Step 4: Cover a very large pan with 2 Tbs (that’s a total guess—probably more) of olive oil. Saute 1-2 onions, diced. Reduce to a low heat. Add the beans to the sauted onions. Mix in 1-2 Tbs of butter. Now the re-frying begins. Don’t re-fry for too long; it tends to dry out the beans. And don’t let them burn

what i would do is in a saucepan over medium heat is fry some bacon strips or mexican chorizo cooked almost well done, while i'm doing that. Chop up a tomato, some onion, a tad of garlic, and like half of a jalapeno seeded and deveined(just for a little spicy taste, you can omit if too hot for you, and/or with children). Drop it all in(add a bit of salt if you'd like) and stir together. Checking for doneness in the meat. Then add the refried beans, lowering the heat to low. Stir together until boiling and the veggies have already softened(about 3-5 min.). Then turn off heat. and let it cool a bit. If you like tortillas, that would be a good accompaniment. Enjoy...

Spread a layer of refried beans.. topp with choped & seeded tomatoes (or drain chopped tomatoes in a can), cooked chopped chicken sauteed with a 1/4 pack of "clubhouse chili sasoning" and a splash of lime juice (or try this if you don't have the package; mix a little garlic powder, chili powder, paprika, onion powder, and salt and pepper then add a little lime juice right before being fully cooked). Melt cheddar or Jalepinio Jack on top, sprinkle with celantro or flat leaf parsley. Serve with crisp, cold or warm tortillias. You coluld also layer corn tortillias in between each layer and add a layer of corn between the the refried beans and chicken. A side of avocado, sour cream, and fresh lettuce. YUMMY!! And people can help themselves to sides. However it you layer the trotillias it'll be like a Southwest "lasagnia"!!! But better.

What I do to make refried bean is: decrease small slices of onion to no longer lots considering you do no longer want your refried beans to flavor too very reminiscent of onions. heat up a frying pan first until now including oil whilst frying pan is heat upload the oil and upload the onions. flow the onion around with the oil with a spatula. whilst onions get a brownish color upload the quantity of beans into your frying pan then use a spatula (the form which you utilize whilst smashing potatoes) There you have it refried beans. Opitonal: you are able to shread cheese and upload it into your refried beans for a greater constructive flavor.

I make chili with refried beans, crushed tomatoes, petite diced tomatoes, chopped onions, hamburger (can be skipped for vegetarian) and chili powder. My kids hate regular beans but they never notice it in the chili and always ask for seconds :).

do a mexican lasagna, and use that on each layer, right on top of the tortillas as your "sauce"
