Leche quemada-I have been trying to match this mexican candy for years.?
But, every one i have ever tried came out brickhard or not dry. And, it was very grainy. Does anyone know a good recipe>ive treid all the ones on the net.

My cousin calls this one Mexican Fudge, but I think it matches what you are trying to make. The secret is in the not stirring more than absolutely necessary and cooking to the correct stage.
In large cast iron skillet:
melt 1/2 cup sugar til golden browned and all liquid
stir in:
2 cups sugar
1 cup evaporated milk or half n half
Bring to a boil stirring only a little, enough to get the sugars all blended and dissolved
Cook to hard ball stage! If you want use candy thermometer and below 3,000 altitude cook to marking on it.
Remove from heat and add
2 teaspoons vanilla extract
2 tablespoons butter - no exceptions
Allow to cool to luke warm and beat to fudge creamy texture
add 2 cups chopped pecans stirring them in
pour into buttered 9 x 13 pan and allow to set.
cut in 2 x 2 inch squares.

Never heard of it, though leche means "milk." I do not have any recipes for that. Ask a Mexican for a recipe, I am sure they know how they make it.
