The Planets, by Gustav Holst.
If you have studied this piece it is hard to break down. As in
1. Why he wrote it.
2.Why he put the movements where he did.
3.How he wrote the piece.
4. (This is a more personal study) Why he chose such a unusual instrumentation.

Definitevely: "The Dance of the Knights" from the Romeo and Juliet ballet suite by Sergei Prokofiev:

(in this video the majestic piece is mixed up with classical scenes of the Chaplin's movie "Great Dictator")
Another favorite that I can hear again and again is the Cantata BWV 66 "Erfreut euch, ihr Herzen" by Johann Sebastian Bach:

Good luck!

-Nods- Very difficult choice. My current favorites are Canon in D by Pachelbel, Chopin's Waltz in C minor (Op. 64), Silvery Waves by A.P. Wyman, and Beethoven's Fur Elise.
Oh, and I agree, Gymnopedies is quite good.
I used to like Clair de Lune, but ever since Twilight...that song is tainted now...

Smetana's Die Moldau, from Ma Vlast. There's some amazing melodies in this piece that get to me every time!

For sure it'd have to be Mahler 5. That symphony is just so amazing it's indescribable.

I quite like Mozart's Twinkle Twinkle even though we all look at this as a children's song.
There is a flavor and beauty that is there throughout the ages.
I like the way David Nevue plays it.
