I have a question about ham hocks?
I am making split pea soup in my crockpot tommorow, and i am using two ham hocks for flavor, can i score the ham hocks before i add them to the crock pot or will the fat off the hock make the soup greasy??? thank you in advance for all the answers

the fat on the hocks will get into your beans whether you score it or not. Does not matter, when you boil or simmer fat it melts into the food. If you don't want the fat, trim most of it off before cooking.
But the fat from the hocks will satisfy appetites with less food faster and last longer than if you do this fat free or low fat. Tastes better too.
You can chill down the bean pot and skim off the fats after cooking also.
I prefer mine with the fat in the peas, beans or whatever else I am cooking. Tastes better and is more satisfying.

It really depends on how much fat compared to how many peas..If its a regular size crock pot I would only add one ham hock or trim the fat off of one..I think two would make it too greasy. I Never score mine I just toss it in.
