Any one have any good cod recipes?

I have a couple pieces of cod I want to have for dinner tonight, but have not been very successful cooking it in the past. I try to keep it healthy (baked, maybe pan fried but never deep fried), so if you have a tried and true recipe it would be appreciated. Thanks.

    We make this "Cod Milanese" at our restaurant.

    Bread the pieces of cod (flour/egg/crumbs)

    Pan fry in some good olive oil on both sides till golden, squirt with a little lemon juice and put in the oven to finish baking. (another 7-10 min)

    In a separate pan, add about 4-5 tbs clarified butter (ghee), the juice of a lemon, grated peel of half a lemon, 4 chopped green onions, 4 tbs pine buts, pinch of salt and a few grates of pepper.

    When fish is done, heat up the sauce until it just starts to bubble. With a slotted spoon, spoon the pine nuts and green onion on top of fish.

    Serve with a small arugula/red onion salad with a simple lemon vinaigrette.

    Here is a great recipe:

    Asian Fish Cakes

    2 pounds salmon, cod, or hake

    3/4 teaspoon salt

    1/2 small jalapeno, seeds & ribs removed, finely diced

    2 teaspoons lime zest

    1 1/2 teaspoons fish sauce

    1 tablespoon thinly sliced scallions, white & light green parts only

    2 tablespoons chopped cilantro

    1 tablespoon grated fresh ginger

    2 teaspoons finely chopped garlic

    1 egg

    2 1/4 cups panko, 1/4 for cup fish mix, & 2 cups for breading

    1/2 cup canola oil

    Check fish for bones & scales, then rough chop into 2-3 inch pieces. Place 1/2 of the fish in food processor & pulse several times until chunky. Do not puree.

    Place into a mixing bowl. Repeat process with remaining fish. Combine chopped fish, salt, jalapeno, lime zest, fish sauce, scallions, cilantro, egg, & bread crumbs.

    Do not over mix. Test a small cake to check for seasoning & adjust as necessary. Form each into 2 oz cakes. Coat with bread crumbs, shaking off any excess.

    Heat canola oil over medium heat in a nonstick skillet. When oil is hot, cook fish cakes about 4-5 minutes per side, or until crispy & golden brown. Transfer the cooked cakes to a plate with paper towels to drain. Serve warm with Sweet Chili Tartar Sauce.

    Sweet Chili Tartar Sauce:

    1 cup mayonnaise

    2 tablespoon Thai sweet chili sauce

    1 teaspoon finely chopped garlic

    2 teaspoons grated fresh ginger

    1/4 teaspoon salt

    2 teaspoons chopped cilantro

    Mix all ingredients & refrigerate.

    Here's a great recipe for Korean Breaded Cod Fish. I've prepared it many times and have had no complaints from anyone. Luckily, the recipe is in the form of a video, so, monkey see, monkey do, lol...
