There are two ways to go about insuring your engagement ring;
The first way is your approach, finding a third party insurance company. In this case, I would recommend "Jeweler's Mutual." They have a solid reputation, here is some back round info:

Licensed in the United States and Canada

Dedicated to preventing jewelry theft with loss prevention education
The second approach is to go through your actual home owner's (or renter's) insurance company if you have one. The company that provides insurance for your home would most likely have a product that covers the jewelry you own. They extend this coverage if you lose the piece anywhere.
With either scenario, you would need to provide them with an appraisal and sometimes a picture of the ring.
I usually tell my clients to do both, get a separate insurance and put it under your home owner's insurance.

There is no way you'll be covered. You'll get insurance once you are married till there is no possibility. There other options would be getting a jewelry insurance. Check with you insurance agent, he'll know what to be done. Definitely just go with whichever company has your homeowner's or renter's policy. You already know how their customer service is, and you obviously trust them enough to insure your home/possessions. If the ring is over $5,000, it'll be put on a separate rider (which is still under your main policy).
Most companies will charge a dollar or two for every $100 your ring is appraised for. You will need an independent appraisal - the receipt you got from the store, or the appraisal the store may have given you isn't sufficient for most companies.

You should be able to get good coverage on your ring through whatever company holds your homeowners or renters policy. They should only add a small amount to what you're already paying.

I have heard that homeowners insurance will cover your diamond, but the extent of the coverage varies.
