How is the word for a particular countryman determined?

For example people for China are "Chinese", Lebanon are "Lebanese", Ireland are "Irish", etc.

I can't find any trending suffix for the name of the country that would indicate how it's categorized.

Update:

I realize they're different suffixes, but what determines how is a particular suffix assigned?

    There is no single suffix. As you have noticed, you find -ese, -ish, you also have -ian (Russian, Armenian, Ukrainian), -an, plus others I cannot recall at present.
