Here are links to three websites that have Puerto Rican recipes. How useful they are only you can judge?

Tostones (fried plantain chips)
Pollo en escabeche (pickled chicken)
Pasteles (dumplings filled with pork, chicken, shrimp, etc.)
Remember, if you want to cook Puerto Rican, you must have sofrito and recaito. If your grocery store doesn't carry them, just go to the rough part of town. This is why I hate shopping in the 'burbs, no one knows what posole is or plantains for that matter. The other option for securing recaito/sofrito is to check community bulletin boards in grocery stores and gas stations in the rougher part of town. Often you can find someone who is selling home made and it is killer.

Make him Italian food. Rice and beans is no culinary treasure.
