Recipe for a Mexican dish?
Is anyone familiar with a Mexican dish that has small bits of chicken and short little noodles in a soupy red liquid. It looked pretty greasy but tasted awesome. I am not Mexican but my neighbors are and they make it sometimes. I believe it's a quick, cheap, easy dish but I am not sure what it's called or anything.

i don't know that recipe but try this recipe
nachos
1 pack of taco seasoning
1 pack of ground beef
1 package of mexican cheese blend if they don't have that cut up some Velveeta
sour cream
salsa
2 avocados
3 jalapenos
1 package of cherry tomatoes
corn chips
cook the beef according to the recipe on the back of the taco seasoning, lay the chips out on a platter and put a good amount of cheese on but save a lot for on top , put the beef on top of the cheese then put the rest on the beef, bake on 350 for 10 minutes or until cheese is melty, cut the cherry tomatoes in half, cut the avocados in half, take out the pit and scoop the insides in a bowl, then put the tomatoes in with it, cut 2 of the jalapenos up and put the seeds in the mixture cut the peppers small and diced, mix up the mixture til it is a guacamole, take the chips out of the oven put on a platter cut the remaining jalapenos in slices put the guacamole, sour cream, and salsa on top and be sure to put them in different spots, sprinkle the slices on top enjoy!

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. 2. In a small saucepan over medium heat, combine the cream cheese and salsa. Cook, stirring until melted and well blended. Stir in chicken and pinto beans. Fill tortillas with the mixture, roll and place into the prepared baking dish. Spread cheese over the top. Cover with aluminum foil. 3. Bake for 30 minutes, or until heated through. Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream. gatita_63109

Well it could be sopa de fideo con pollito, a name I just made up. Fideo(s) is a small noodle sold in Mexico that is used in soups. BTW for Mexicans any pasta and rice too is called soup even if it's not part of a soup: spaghetti, white rice, red rice, linguine, etc. I have never seen the specific dish you describe. Different familes and different cooks all have their own versions of soups.
Do the logical thing and ask your neighbors who gave it to you to taste.
