Rosemary infused olive oil?

My favorite restaurant is Tuscany in Manteno, illinois. they have this awesome olive oil to dip bread in. i want to make it at home but i hear all these things like you should use it within 3 days..etc. it will only be me eating it and i cant eat it everyday. is there way to make it and store it for a while? it has olive oil, fresh rosemary sprigs, garlic cloves and red pepper flakes. THANKS!

    Hi,

    They are right, you can't store it.

    But I can't still see the problem: just do of it as much as you eat in one time.

    Olive oil can stay in its open bottle for months (put the corked bottle in a fresh and clean environment).

    The other fresh ingredients can be bought in a small quantity time by time.

    We use this way in Italy.

    Enjoy it.

    I paintings at Carinos Italian Grill. We serve herb-infused oil with bread carrier. Any dried or recent herbs you could upload to an Italian pink sauce could be flawlessly proper. In the bottles we use, there's a medley of: rosemary, thyme, oregano, sage, basil, salt and pepper. You will even get inventive and upload garlic and/or beaten pink pepper. For excellent taste, you will have to enable two weeks for the flavors to infuse. It will hold for approximately a yr. The oil preserves and protects the herbs from spoiling.
