Anyone have a simple,straightforward recipe for microwave lemon curd?

I have one for my slow cooker but want to try out a microwave one. Cheers

    3 decent sized lemons, washed

    3 eggs

    cup of sugar

    200grms butter

    into a microwaveable bowl, put the sugar, finely grated lemon zest, then squeeze the lemons and measure a cup of juice, the same size cup as the sugar. chop the butter up, put the bowl into the microwave for a couple of minutes until the butter has almost melted, give it a stir and the butter will melt completely. lightly beat the 3 eggs, add them slowly to the lemon mixture, stirring all the time.

    put the bowl back in the microwave and put it on half power for a minute, take it out and stir, keep doing this until it thickens and coats the back of a wooden spoon. strain it through a fine sieve and put it in clean jars. this will make 3 small jars.

    As long as you only give it a minute at a time on half power, or 30 secs on full power, then stir it in between, it shouldn't get too thick. I used to stand over a double boiler for ages but this method is much quicker and it tastes just a good.

    I would not make lemon curd in the microwave as I would be bothered about it curdling. When heating with a microwave the heat is often patchy. This is not ideal for cooking something that requires being cooked in a double boiler and stirring continuously throughout cooking.
