Where in Tuscany region is more laid-back, fewer tourists?

You certainly can lodge in a farmhouse and you've already been given some great suggestions, but while Montepulciano and Volterra are harder to get to they still are tourist destinations. I would suggest some of the even lesser visited places like San Miniato or Montelupo which still have good access via train to Florence and the other tourist hot spots for the days when you do want to get out and see things.

I work for Tuscany's social media team, I can not suggest a farmhouse, but what I can say is that there are many farmhouses you can lodge in for a month and that it is even more convenient to do so. I strongly suggest you look into the Garfagnana area or the Montalbano area. These two are not touristy and they are however easy to reach and to depart from for day trips that will let you visit Tuscany's main sites ( packed with tourists).

if you have the money to do so, you can absolutely rent a farmhouse for a month. it's a WONDERFUL way to take in tuscany, because you'll be with an actual italian family who can give you "insider tips." here's a website to help you start looking:

anywhere in tuscany is laid-back, quite frankly, but to avoid tourists, avoid the ones that are easy to get to from the cities. for example, avoid san gimignano, which is one of the most touristy tuscan towns because it's the easiest to access from florence where lots of tourists stay. i would recommend volterra or montepulciano, which are both stunning and less touristy.
