    An emulsion is is a mixture of two immiscible liquids - like the oil and lemon juice salad dressing.

    A colloid is a mixture containing particles which are too small to see with the naked eye (but larger than molecules.

    For example, fog is a liquid/gas colloid, whipped eggs white is a gas/liquid colloid. Milk is a liquid/liquid colloid and muddy water is a solid/liquid colloid.

    So, you will have spotted that an emulsion is simply a type of liquid/liquid colloid.

    A colloid is one of the three primary types of mixtures, with the other two being a solution and suspension. A colloid is a solution that has particles ranging between 1 and 1000 nanometers in diameter, yet are still able to remain evenly distributed throughout the solution. These are also known as colloidal dispersions because the substances remain dispersed and do not settle to the bottom of the container. In colloids, one substance is evenly dispersed in another. The substance being dispersed is referred to as being in the dispersed phase, while the substance in which it is dispersed is in the continuous phase.

    Emulsions

    Emulsions are immiscible (incapable of mixing) colloidal suspensions of one liquid in another liquid.

    EG: Milk in which fat globules are dispersed in water.

    Collidal solution ( or colloids) are the type of solution in which partical size are in range of 10-9(ten to power 9) to 10-7 and they can pass through filter paper but not animal membrane and they are

    Translucent .

    In collidal system, solute is termed as dispersed phase and solvent is termed as dispersion medium. eg: it has been found that milk is under the category of collidal solution due to its particle size. Since it is a collide, it must have dispersion phase and dispersion medium.

    When a collidal system has both- dispersion phase and dispersion medium, as LIQUID then it is called EMULSION and milk is an example of emulsion.

    Emulsion is of 2 types: 1. oil in water- if water is in excess

    2. Water in oil- if oil is in excess.

    Example of “water in oil” emulsion is butter- a product of milk, and that of “water in oil” is cream.
