Commercial Deep Fryer act funny?
I have a commercial deep fryer that has started suddenly to act funny, as started heating the oil to a dangerous boiling level, cool down and do the same thing again with any reason... any idea why ??? please

the internal thermometer is probably busted. is that a gas type unit or an electric one? the electric ones are more sensitive to this kind of problem since power surges or fluctuations can affect the unit. have it checked out if it is still in warranty... if not, have it repaired.
