I need a recipe for ground beef, long grain rice and frozen spinach to use in a casserole. Do you have one?

I have ground beef, frozen spinach, sour cream, long grain rice and different cream soups handy. I looked and searched but cannot find anything I like. Do you have a good recipe using the basics; ground beef, spinach, rice, even diced tomatoes, for a casserole?

    This recipe is really easy and really good!

    1 pound ground beef

    1 (4.5 ounce) jar sliced mushrooms, drained (optional)

    1 medium onion, chopped

    2 garlic cloves, minced

    1 1/2 teaspoons dried oregano

    1 1/4 teaspoons salt

    1/4 teaspoon pepper

    2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry

    1 (10.75 ounce) can condensed cream of celery soup, undiluted

    1 cup sour cream

    1 cup uncooked long grain rice

    In a skillet, brown beef; drain. Add mushroom, onion, garlic, oregano, salt and pepper. Add spinach, soup, sour cream and rice; mix well. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with mozzarella cheese. Cover and bake at 350 degrees F for 45-50 minutes or until the rice is tender

    Check out the attached site for a recipe for porcupine meatballs. The word porcupine refers to the rice. Spinach could be added to the meatballs, or to the sauce, but I think it would be prettier in the meatballs. You could incorporate some of the sour cream to the sauce at the very end of cooking. Be careful NOT to bring it to a boil after adding the sour cream, or it will curdle.

    *** CHICKEN ON THE RANCH Number of servings: 2 to 4 INGREDIENTS 1 tbs butter 2 to 4 chicken breast halves or thighs( thawed) 1/3 cup onions 1/3 cup of Ranch dressing or 2 level tsps, dry Ranch salad dressing 2 cups rice 4 cups hot water INSTRUCTIONS In a large frying pan, sauté onions until just tender . Add rice and heat until rice starts to lighten. Add hot water, Ranch dressing and stir until blended. Bring to a simmer and place chicken on top. Cover and let simmer for 20 to 25 minutes. Turn off the heat, lift lid and place a paper towel over the top, then replace the lid. Let stand for 5 minutes more.
