What slang terms does a cruise ship's crew use for the passengers?

    They're called guests or passengers. There's no slang term as such, but the shorthand term (in emails and so on) is pax. This is used in many sectors of the travel and hospitality industries to mean people.

    They come on as passengers but leave as cargo. (lots of good food 24/7)
