What kind of ducting can I use to install a restaurant hood vent?

I am trying to start a restaurant on my own and can't afford the thousands of dollars $$$$$ quoted to me so I am going to have some construction friends help me install the hood vent and the duct work. Can somebody tell me what kind of ducting I can use? Can it be the flexible piping? Does it have to be stainless steel or can it be aluminum? I also plan to wrap it in fire protect coating as well. Any help is greatly appreciated!

    Please refer to the hood fan owners manual for the proper pipe sizing and specifications. Typically you should not use a flexible piping. Use rigid. There will also be some clearance diminsions that you will have to adhere to for fire codes. Some manufactures require double wall vent pipe, while others will allow you to use single wall. You can save money by buying from a heating/cooling whole-seller for materials. Labor is reall the only area you can save on. In the cooking area, Stainless is an easy to clean surface. Once past the ceiling you can change to Galvy or aluminum. Your roof vent should be specified in the manual.

    this is a code question, which may vary from state to state or even city to city, also depends on what you are cooking, my guess is a stainless vent all solid, probably double walled will be needed, call your city inspection office they may be willing to tell you
