Well if you do it through PvP (player vs. player match such gang shoot-outs) get 250 head shots per gun. Through pve (player vs. AI) no idea, sorry.

For example, if you want a winchester repeater gold, you have to complete the challenges found in your journal. Once unlocked a golden gun, you will also earn titles for the guns.
