What kit would you guys recommend? Is the 930 the better processor or should i go for the 875 unlocked?
It will primarily used for photo and video editing, but some meager gaming as well. Nothing to serious.

If you just compare the processors, i7-930 has slightly better performance per dollar;

However, since the i7-875 uses a cheaper platform, it comes out best in overall system performance per dollar;

And once overclocked, you really get more performance than what you paid for;

For what purpose?
When you get to the Core i7 level, it really depends upon what your intended application is, and whether you intend to overclock.
For gaming the 930 is better. Even though it's clocked slightly lower, being an LGA1366 design means the motherboard choices are much friendlier towards high-end dual graphics card configurations. The limited number of PCI-E lanes in LGA1156 can bottleneck really high-end setups, and that has far more impact on overall gaming performance than any difference between the CPUs.
It also costs less, and having an extra $50 to put into your graphics card is significant- that's often enough to raise you a performance level. Having a GTX 460 with a Core i5 750 beats having a GTS 450 with *any* Core i7.... Same thing with a Radeon 5830 vs a 5770, or a 5770 vs a 5670.
