    "Sugar candy" refers to any type of candy made primarily from sugar. You can make most sugar candies by beginning with simple syrup, a combination of sugar and water. You don't need to attend culinary school to learn to make sugar candy. You just need a little patience and an appreciation for sweets.

    1 Choose a recipe. For basic sugar candy, you don't need anything but sugar and water in correct proportions. Make variations on the candy by adding color or flavoring. More complex recipes include toffees, fudges and caramels.

    2 Prepare your materials. If you're going to use a pan or other mold for your candy, butter it and have it ready before you begin making your candy. Get out your candy thermometer and all the ingredients in your recipe. Make sure that all equipment and utensils are clean and dry.

    3 Combine your sugar, water and any other ingredients in a saucepan or pot in the order your recipe requires. You usually begin with just the sugar and water.

    4 Heat your ingredients at a medium temperature. Temperature is very important to candy making, as it determines the hardness of the final candy. The lower the temperature you cook at, the softer the candy. Check your temperature with a candy thermometer.

    5 Pour your sugar candy syrup onto a flat surface or into a mold. You can simply pour the syrup onto a metal or stone table for a basic sugar candy. If you cool the syrup quickly, it will form a hard candy. If you cool it slowly, it will form a flexible, taffy-like solid.

    6 Shape your candy after it has partially cooled. If you didn't use a mold for your candy, cut the candy into pieces and form them by hand.

    TIPS

    Prevent your syrup from forming unwanted crystals by buttering the sides of your pot or pan before you begin making your syrup.

    Handle hot candy with caution. Syrup gets hot and can burn you easily.

    OLD FASHIONED HARD CANDIES:

    Old fashioned hard candy is a surprisingly easy and tasty treat you can make with very few, cheap ingredients! Try this for a wonderfully tasty treat - perfect for those sugar cravings!

    Ingredients

    2 cups sugar

    2/3 cup light corn syrup

    3/4 cup hot water

    flavoring of your choice

    Steps

    1 Pour 2 cups sugar, 2/3 cup light corn syrup, and 3/4 cup hot water in a small saucepan. If you're using a candy thermometer, (which is highly recommended) make sure that the pan is small enough for the bulb to be submerged in the solution.

    2 In a large saucepan, combine the sugar, corn syrup and water. Stir over medium heat until the sugar has dissolved, about 5 minutes. Without stirring, let the mixture come to a boil which should be about another 5 minutes,

    3 Raise the temperature to high as it boils.

    Right before the liquid reaches exactly 300 degrees Fahrenheit, add your food coloring and flavoring in to the mixture, doing so will allow the boiling action to stir the color and sugar into the mixture.

    4 Watch your thermometer until the temperature is at exactly 300 degrees. (If you do not have a candy thermometer you can fill a glass with really cold water then take a drop of the candy liquid and if it solidifies in the shape of a ball and floats to the surface then its ready for next step.) Make sure your mixture is removed IMMEDIATELY at 300 Degrees F, or it will burn!

    5 When it is still very hot add a dab of flavoring oil and several drops of your choice of food coloring or Kool Aid. Mix quickly.

    6 Pour the molten sugar onto a greased cookie sheet. Allow it to cool. Spread the mixture around the sheet before it cools too much. It is not advised to put the mixture inside the freezer as it makes it harden too fast.

    7 After the sheet cools (30 minutes - an hour), break up the candy into several pieces and dust with powdered sugar. For a variation do not dust the pieces and simply leave them as they are - they look like stained glass this way.
