Camping Recipes - need some good ones please!?
I'm going with a few friends to a cabin in the mountains this weekend & am looking for some good ideas foodwise. We will have a grill and a campfire as well as the kitchen in the cabin, but would prefer to cook outdoors. Thinking about a pork tenderloin for Saturday but would like some other ideas besides the usual bbq sides.
Any suggestions?

camp chili-
Ingredients
3 pounds ground beef
3 onions, chopped
10 cloves garlic, minced
3 (15 ounce) cans pork and beans
3 (15 ounce) cans kidney beans
1 (14.5 ounce) can stewed tomatoes
3 tablespoons chili powder
1 (12 fluid ounce) can or bottle beer
salt and pepper to taste
3 cups uncooked rice
Directions
1.In a large pot over medium high heat, saute the ground beef for 5 minutes. Add the onions and garlic and saute for 5 to 10 more minutes.
2.Add the pork and beans, kidney beans, tomatoes, chili powder, beer and season with salt and pepper to taste. Stir thoroughly and reduce heat to medium low.
3.Cover and simmer for 1 to 1 1/2 hours, stirring occasionally.
4.Cook the rice according to package directions. Serve the chili over the rice.

grilled sausage with potatoes and green beans-
Ingredients
3/4 pound fresh green beans, trimmed and halved
1/2 pound red potatoes, quartered
1 large onion, sliced
1 pound smoked sausage, cut into 1 inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon vegetable oil
1 teaspoon butter
1/3 cup water
Directions
1.Preheat an outdoor grill for high heat.
2.On a large sheet of foil, place the green beans, red potatoes, onion, and sausage. Season with salt and pepper, sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
3.Place foil packet on the prepared grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.

cowboy casserole-
Ingredients
1/2 pound bacon
1 pound ground beef
1 small onion, chopped
2 (15 ounce) cans baked beans with pork
1/3 cup barbeque sauce
1 (7.5 ounce) package refrigerated biscuit dough
Directions
1.Cook bacon in a large skillet or Dutch oven over medium heat until evenly browned. Drain, and cut into bite size pieces. Set aside. Add hamburger and onion to the skillet, and cook until no longer pink, and the onion is tender. Drain.
2.Stir bacon, baked beans and barbeque sauce into the ground beef, and bring to a boil. Reduce heat to medium low, and place biscuits in a single layer over the top of the mixture. Cover, and simmer for about 10 minutes, or until the biscuits are done. Place two biscuits on each plate, and spoon beans over.

campfire banana splits-
Ingredients
6 large bananas, unpeeled, stems removed
2 cups semisweet chocolate chips
1 (10.5 ounce) package miniature marshmallows
Directions
1.Preheat the grill for high heat.
2.Spray 4 sheets of aluminum foil, large enough to wrap bananas, with cooking spray.
3.Slice the peel of the banana from stem to bottom, while slicing the banana inside lengthwise. The bananas can be cut into slices instead if you like, (while still in the peel) for easier handling later.
4.Carefully open the banana just wide enough to place the chocolate chips and marshmallows inside the peel with the banana. Stuff with as much of the chocolate chips and marshmallows as desired.
5.Wrap the bananas with the aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chips and the marshmallows, about 5 minutes. Unwrap bananas, open the peels wide, and eat with a spoon.

Bake Time: 15-20
Servings: 8
Ingredients:
8 Rhodes™ Dinner Rolls, thawed but still cold (one per hot dog)
hot dogs
Directions:
Roll each roll into a 12-inch rope. Wrap the rope around a hot dog 2 or 3 times, securing ends in dough. Place each Twirly Dog on a roasting stick. Cook over campfire or coals, turning often, about 20 minutes or until dough is cooked and browned. Serve with your favorite hot dog fixins.
Can also be baked in 350°F oven 15-20 minutes
