Change the shape of a photo?

I want to change the SHAPE of a photo that will be used as an icon and logo. I have used masking in Photoshop, however, once the picture is saved as a .jpeg or .gif or anything else, and then previewed, it is still square or rectangle. I really don't want the blank background.

    You can't change the shape of a digital image. All digital images are square. The only way to get an effect that appears not to be square is to create a transparent background, and save your image in PNG or GIF format (the only two that support transparency).
