Kerala Shrimp In Spicy Masala
20 shrimp/prawns, cleaned and deveined (tails intact)
2 teaspoons salt
1/2 cup coconut oil, more as needed
1 1/2 teaspoon mustard seeds
4 green chilies, chopped
1 piece (1-inch size) ginger, chopped small
6 cloves garlic, chopped small
4 onions, sliced
2 teaspoons curry leaves
1 1/2 teaspoon chili powder
1/4 teaspoon turmeric
***Garnish***
chopped coriander leaves
Directions:
Make slits with fork on prawns and rub salt on them. Leave 1 hour.
Heat coconut oil and saute prawns until tender. Drain. Set aside.
In same oil saute mustard seeds, green chilies, ginger, garlic, onions, and curry leaves about 3-4 minutes. Add prawns, chili powder, and turmeric. Mix contents thoroughly and cook 2 minutes.
Remove from fire and toss in the coriander leaves. Serve hot.

Use your favorite shrimp recipe, but replace "oil" with "coconut oil".
