What are some healthy snack options?
I don't eat much dairy/animal protein so what are some healthy snack options for me besides nuts?

You have certainly been given a lot of answers!
I love having tortillas spread with peanut butter and cinnamon, and stuffed with apples. It's a great snack. As many have mentioned, hummus and pitas are fantastic as well, or chips with salsa and/or a bean dip. Fruit, trail mix, rice cakes, and raw vegetables served with a dip are all good options too. Halvah is a yummy snack, although sugary, if you don't mind that it may have egg or honey in it. Wraps are easy to make also with a quick salad, or some beans. Sandwiches with avocado, sprouts, deli slices, and other toppings are great too. Peanut-butter and banana sandwiches as well. Granola bars. Non-dairy yoghurt. Oatmeal cookies. Tahini with toasted pitas. Fruit leathers. A quick tofu scramble with veggies. Noodles cooked in broth, and seasoned with lime juice and hot sauce, maybe with some peas or other veggies thrown in, makes a quick dish. Baked beans on toast with molasses. Leftovers from last night's dinner. Fruit popsicles. Samosas. Vegetable dumplings. Pakoras. Crackers spread with a pate. Tempura-battered veggies. Soy jerkies. Falafels. Fruit smoothies. Avocado sprinkled with a bit of sea salt.

I am also a vegetarian and don't eat either dairy, eggs or animals. I don't know if you want sweet/salty snack but here are my favorites:
Carrots or celery with lime and salt
Soygurt with granola
Hummus and pita chips
Non-dairy soy cottage cheese with strawberries, blueberries peaches and honey (I stole this one from a TV show lol)
Tortilla chips with salsa
Oatmeal with dates
"Mini" Caprese salad: Tomato, mozarella (yeah dairy sorry), basil & olive oil (salt to taste)
"Olive hummus" with baked olive oil-drizzled bread (I take black and green olives, put them in a food processor till they're nice and chopped and then add a little olive oil)
Pimento & parsely dip with any chips/bread (those "fancy pimentos" that are roasted bell peppers, with non-flavored soygurt and cream cheese
Refried beans & chips
Stuffed and breaded mushrooms (I use vegan parmesan) and you can broil or fry them :)
Falafels are always great
Fried green tomatoes (like the movie hee hee)
Pickles (I love them)
Veg pizza (takes longer but you can personalize it)
I love pumpkin seeds, almonds or macadamias as a snack (filled with good fatty acids)
Fruit salad (you can personalize it if you make it at home)
I've seen tofu jerky (haven't tried it yet but sounds like an alternative)
Tomato, watermelon and basil skewers (I saw this one on Food network Giada's Everyday italian so good!!)
I love grilled veggies (drizzle olive oil and a little garlic powder, salt & pepper to taste) (you can use bell peppers, zukini, carrots... so many veggies!)
Deviled eggs (well if you're an ovo-veg)
Non-dairy ice cream

Hummus and Pita or Lentil Chips
Granola
Dried fruits, preferably without sugar
Pumpkin Seeds
Apple with Almond Butter
Banana with Cashew butter
Freeze dried fruits
Sweet potato fries(these are very simple to make and you can freeze them then heat them up later)
Store bought falafel, they usually are pretty small so good for a snack.
A cup of coconut or soy yogurt plain or topped with granola
A small bagel with jam, preferably a jam without sugar or splenda

We are vegetarians from birth. Here is a recipe for Lentil pancake.( called ADAI)
Ingredients:
2 cups Parboiled Rice (ukda Rice)
1/4 cup Red Gram Split (masoor Dal)
1/4 cup Bengal Gram Split (chana Dal)
1/4 cup Pigeon Pea Split (arhar Dal)
1/2 cup Black Gram Split (urad Dal)
4 Green Chillies
1 inch Ginger
1/4 cup Coriander Leaves (chopped)
10-12 Curry Leaves
8 Red Chillies Whole
Salt to taste
1/4 tsp Asafoetida
1 Onion
1/4 cup Coconut (scraped)
Refined Oil to fry
How to make onion adai:
Wash and soak the rice and the dals for about 4 hours.
Wash and grind the green chillies, ginger, coriander leaves, curry leaves with red chillies and salt to a coarse paste.
Peel and chop the onion finely and keep aside.
Drain and grind the rice and dal to a coarse batter. Rest the batter for about an hour.
Mix the paste, asafoetida, onion and coconut to this batter and mix well. Check for salt and keep aside.
Heat a heavy dosa griddle, smear oil and spread one ladle full of this batter to a thick circular shape. Make a few holes in the center. Pour oil on the sides and in the center, cover and cook over low heat. ( Use non stick pan and go slow on the oil )
Turn over and pour the oil and let it cook till it is crisp all around and golden brown in color.
You can make about 8-10 adais. Serve hot with the chutney of your choice.

carrot sticks, celery with hummus. pun-kin seeds. chop a few different kinds off fruits up to snack on.
