    I don't think we have one specific word to mean that... The best one I can think of is "allevatore", though this includes cattle growing not just for milk, but for meat too!

    "Allevatore" is a generic term for breeder and apply to breeding of any animal for any reason, from sheeps to dogs to cattle, even if the purpose is just producing milk

    "Casearo" is the term specifically used for a person who make cheese, but doesn't imply that person is also necessarily a breeder.
