How to make Steak and Gravy like IHOP does?

Anyone got any suggestions or recipes that make fried cube steak taste good like the one at IHOP? Thanks for any input! I suck at making cube steak (either too chewy or too greasy)!

    I'm a chef, and I make country fried steak occasionally. I start with pounding the steak with a meat mallet and then soak it in a mixture of buttermilk and a dash of hot sauce for at least 6 hours. Then I make a seasoned flour with AP flour,salt, pepper, paprika, granulated onion , granulated garlic , fresh chopped thyme, and a touch of cumin and cayenne pepper. You then heat up your oil to about 325*F. Next you lightly shake off any extra buttermilk and flour the steaks with the seasoned flour. Then fry until deep golden brown, about 5 minutes. For the gravy I use about 4c of half and half, 1/2 tablespoon of garlic powder, 1 tablespoon of granulated onion, a dash of hot sauce, salt and COARSE GRIND PEPPER to taste. Bring this to a simmer and thicken with roux. Roux is a French cooking term, It is a paste used for thickening sauces, stocks, gravy, etc. It is very easy to make and holds up well in the cooler. Roux- 8oz.(1/2 pound) butter melted, 8oz. (1 cup)all purpose flour. Cook medium heat stirring constantly for about 3-4minutes. Whisk roux to gravy in small batches until you obtain your desired thickness. It is 1000 times better than IHOP,Good luck!!!

    I don't understand why so many find it a disgusting combination. It's chicken and bread, a common breakfast combination where I come from. The sweetness of the waffles and syrup complement the salty, savory chicken. Of course, the waffles are delicious homemade Belgian waffles, not tasteless, cardboard frozen waffles. We also enjoy our chicken biscuits in Virginia. If you ever drive through VA, before 10:30 a.m., look for a Hardee's drive-thru. You'll get the best chicken, pork chop, and sausage biscuits ever made. They're so good, you might move here.
