can emails get changed in transit or by other means?
how is it possible for a email sent by me from my yahoo email account end up to the receiver with a email address from my contacts...as the sender

All that has to be changed is the display name and/or the return.
This can done if you have a worm and your computer is being use, and most like is, sending an SMTP out of your computer to another party.
This is not the only way it can happen but the odds are good that's what is happening.
If you only check your mail web base and not via outlook or another mail client, you should consider blocking SMTP,25/POP3,110/IMAP,143.
At least run a anti-malware and worm program.
