    I made this over the holidays- comes out perfect in a large crockpot:

    Creamy Macaroni and Cheese

    Ingredients

    2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)

    4 tablespoons (1/2 stick) butter, cut into pieces

    2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese

    3 eggs, beaten

    1/2 cup sour cream

    1 (10 3/4-ounce) can condensed Cheddar cheese soup

    1/2 teaspoon salt

    1 cup whole milk

    1/2 teaspoon dry mustard

    1/2 teaspoon black pepper

    Directions

    Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a slow cooker, combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the slow cooker on low setting and cook for 3 hours, stirring occasionally.

    Nacho Hash Brown Casserole Recipe

    Ingredients

    * 1 package (32 ounces) frozen cubed hash brown potatoes, thawed

    * 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted

    * 1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted

    * 1 large onion, finely chopped

    * 1/3 cup butter, melted

    * 1 cup (8 ounces) reduced-fat sour cream

    Directions

    In a 3-qt. slow cooker coated with cooking spray, combine the first five ingredients. Cover and cook on low for 3-4 hours or until potatoes are tender. Stir in sour cream. Cover and cook 15-30 minutes longer or until heated through. Yield: 8 servings.

    Pot Roast Recipe courtesy Paula Deen

    1 (3-pound) boneless chuck roast

    1 1/2 teaspoons House seasoning, recipe follows

    1/4 cup vegetable oil

    1 onion, thinly sliced

    3 bay leaves

    3 or 4 beef bouillon cubes, crushed

    2 garlic cloves, crushed

    1 (10 3/4-ounce) can condensed cream of mushroom soup

    1/2 cup Chardonnay

    Sprinkle roast on all sides with house seasoning. Using a skillet over high heat, sear roast until brown in oil. Place roast in a slow cooker, and layer onions, bay leaves, crushed bouillon cubes, garlic, and cream of mushroom soup. Add the Chardonnay and cover with enough water to cover all of the ingredients. Cook on the low setting for 8 hours.

    House Seasoning:

    1 cup salt

    1/4 cup black pepper

    1/4 cup garlic powder

    Mix ingredients together and store in an airtight container for up to 6 months

    Pot roast is awesome. I get whatever cut of beef is cheapest, cover it in a bit of seasoned salt and sear all sides. At the bottom of the pot I put baby carrots, cut up potatoes or those little red potatoes in there and some cut up onions or pearl onions. You can add whatever veggies you want really. Throw the roast on top of that stuff and then I put little pads of butter on top of the roast. I put a tiny bit of water in the bottom (just barely enough to cover the bottom of the pot) and cook it on low for 8 hours. You can use the drippings at the end to make gravy. I just do a quick and easy one, 1 Tablespoon of butter and 1 Tablespoon of flour mixed together into a paste, and heat 1/2 cup of drippings in a pot then add the paste in. For 1 cup of dripping, 2 Tbsp. of each, etc. Easy! Also, tons of variations.

    Salsa Chicken (super easy and inexpensive)

    Throw some chicken in the pot (I use three frozen breasts)

    1 and a half cups salsa

    1 can black beans, drained and rinsed

    1 cup frozen corn

    Cook on low 6-8 hours or high for 4 hours. I shred the chicken and add a little sour cream. Serve over rice (with this we top with grated cheese and more sour cream) or make quesadillas, burritos, etc. Awesome leftovers :)

    I got the Salsa Chicken recipe from crockpot365.blogspot.com and she has lots of others. Look up green pepper chicken (it is awesome) and the Apricot Chicken. Love that site.

    The best pork chops in the world. Dredge the chops in 1/2 cup flour, throw the leftover flour in the CP. Brown the chops in a skillet. Add to the CP with 1 can chicken broth and 1 tsp dry mustard. CP for 3 hours. Stir the gravy and serve on top of the chops.

    pot roast with onions and carrots,just add water,cook over nite on high,turn it down in the morning,its magnificent
