So, this is a COOKING CHALLENGE! I give you the ingredients & you give me a dish or dishes!?

Alright so, I'm cooking dinner for my family tonight. I'm only able to use what I have in the cabinet- no going to the store or anything. I don't have much, but there are some things to work with here.

Here's what I have:

-pork loin boneless roast (1.79lb)

-salt

-pepper

-garlic powder

-seasoned salt

-old bay

-adobo (powder)

-sazon ( with coriander & annatto)

-chopped onion (dried in a jar)

-italian seasoning

-sylvia's chicken rub (which includes garlic, oregano, basil, paprika, salt & other spices)

-fresh basil

-fresh rosemary

-sylvia's crispy fried chicken (just the dredge that goes on the outside)

-potatoes

-boxed mashed potatoes (not really a fan, but they're here)

-green chiles (canned)

-cheddar cheese (extra sharp white & mild yellow)

-sour cream

-bag of frozen veggies, already cooked but still in bag (broccoli, onion, red peppers & mushrooms)

-beef broth

-orange juice

-mustard (yellow, sweet & hot)

-roasted red peppers

-frozen peas

-chorizo

-panko bread crumbs

-beer (the brand is sol, i'm assuming its close in flavor to corona)

-black olives

I don't want anything too spicy, nothing with sugar, pasta or rice (I had bariatric surgery & those things are no-nos). I can use splenda. We also have other spices & condiments (a lot of them), so if something you would normally use isn't here (as far as condiments go), add it & we most likely have it.

I'm looking for a meat marinade or something (the pork, obviously), and two side dishes (a starch & a vegetable).

We're very adventurous when it comes to food, so feel free to use your creativity.

I can roast the vegetables even though they've already been steamed?

    take that pork roast and put it in a bowl and cover it with water, and the orange juice. Then season the water with your adobo or just salt till it's as salty as the sea (brining is the best way to insure a moist piece of loin). Let it sit in the water, in the fridge, for a few hours. Then heat your oven up to 400. Rub some oil and some of your rosemary and pepper on the roast, no more salt. Bake it till the internal temp is 155.

    Make some mashed potato's and instead of milk use the sour cream and roasted red peppers, you didn't list garlic but some roasted garlic would be great in them. Just put a cleaned up head of garlic in the oven in a foil pouch with a drizzle of oil. Put it in when you start to pre heat your oven,

    For your veggies put them on a baking sheet, drizzle with oil and put them in the oven, boy if you had some Parmesan cheese that would be great. When you bake them under a high heat the veggies take on a different flavor.

    **** Yes, reheat them in the oven. When you pull the pork out set the oven to broil and get them as close as possible, you just want them lightly toasted. If you sprinkle on the parm (even the cheap can stuff works for this) it will get nutty and golden fairly quickly. If they are already practically mush and over cooked then this won't help! IF this is the case just try this next time you go to make veggies and have them as they are for tonight

    Put the pork loin in a bag to marinate w/ a couple tblsp of the minced rosemary, garlic and onion. A little olive oil would be best, but you can use other oils or beer. Beer works great...only about half a can. Let marinate in fridge for a few hours. Bake at 350 degrees. About 1 hour for a 1 lb tenderloin.

    Cube potatoes and add garlic, onion and fresh rosemary. Add ingredients to casserole dish w/ either butter or olive oil. Bake at 350 for about 45 minutes.

    Steam up your frozen broccoli and add cheese tot he top when it's finished.

    Cook the broccoli, onion, red peppers & mushrooms and sprinkle with Old Bay and garlic...a little olive oil if needed.
