Recipe for smooth grain free vanilla fudge?
Hi, i have been trawling the internet for a smooth and grain free vanilla fudge, but am yet to find one. I have made certain recipes and believe the consistency of the fudge to be correct, but it is just not what i want from fudge!! I don't know if anyone has ever had Thorntons fudge but that is exactly the type i want.Grain freed extremely smooth is what i'm looking for. Any tried and tested recipe's in metric measurements would be much appreciated. Thanks

I often find that if a fudge uses marshmallow in it, it comes out creamy.
Vanilla Fudge Recipe
Ingredients You Will Need:
1 cup Marshmallow Crème
½ cup butter
12 ounces vanilla chips
3 cups granulated sugar
¾ cup evaporated milk
First, grease the upper sides of a 2-quart saucepan. Then grease a 5- x 10-inch pan. Place the sugar, butter and evaporated milk into the saucepan, and stir. Bring sugar mixture to a boil over high heat, and boil for 2 minutes, stirring constantly. Remove from heat, and stir the vanilla chips and marshmallow crème into the fudge mixture.
Keep stirring the fudge until mixture becomes smooth and glossy. Pour the fudge into the buttered pan, and chill until fudge is set. Cut the fudge into individual serving pieces.
Note: You can also add ¼ of a cup of chopped nuts to the fudge if desired.
Variations: Try adding chocolate chips or butterscotch chips to the vanilla fudge recipe. This creates a wonderful blending of flavors. You can add walnuts, slivered almonds or chopped pecans as well. A fun treat for the kids would be to add some miniature chocolate candies in place of the nuts.

This'll take some practice but once you get it, it's super easy. Not sure if it's truly the "vanilla" recipe you're looking for though.... 2 cups brown sugar 1 cup heavy cream 1 Tbsp butter 1 tsp vanilla Blend the cream and sugar using a spoon. Microwave for about 5 minutes on high. Then remove from Mic and use electric hand mixer on low for about 3 minutes. Return to Mic for another 5 on high. Remove from Mic, add a Tbsp of butter and a tsp of vanilla. Electric mixer for about 5 minutes, or until you see that it's starting to get a shine to it and cling to the sides of the bowl. Pour it into a loaf pan lined with wax paper and let it set in the fridge for a couple hours. THAT'S IT. The whole process takes less that 30 minutes and uses only a microwave, an electric mixer, and a microwave-safe bowl. Like I said, it may take a few trys to get the consistency right as each microwave is a little different. If you screw it up and it's too soft, doesn't set. Save it and use it as an ice cream topping. Or a glaze on a ham! If it sets too hard, it's still good, just more of a candy. It coould be crumbled and used as topping on ice cream, cakes, etc.. Kids will still love it.

If any fudge is stirred more than to just dissolve the sugar in the liquid it will form grains.
If any candy that contains a milk product for the liquid is cooked at a higher temperature than medium will scorch.
It is the method of cooking rather than the measurements of ingredients that determines if a fudge or other candy is smooth or grainy.
