if i were to write about a king, would i write, for example: King John the second OR King John The Second OR King John the Second?

Jane B is absolutely correct.
Either King John the Second, or more accurately King John II

Usually, you would use numerals rather than words, so it would be King John II.
However, if you feel the necessity to use words then I would go with King John the Second
