dehydrating cooked veggies?

OK, I dehydrated some raw potatoes then cooked them up. They re-hydrated OK and tasted fine but looked terrible.

I am now thinking it would be better to cook them first then dehydrate them....any thoughts on this?

    Well potato's have a way of turning brown if not treated with a chemical its the same with apples. Just spray on some lemon juice and it won't turn brown. And no don't cook it first because when you bring it back it will just be mush as the fiber will be all cooked away.

    The raw potatoes will have oxidized in the presence of oxygen and will have turned brown and then black. They should have been cooked first. Get yourself a book on dehydrating foods and study it a bit. It is good to be prepared and educated on any topic as it is a shame to waste food and energy and time on a project. Good luck. the Ecuadoreans dehydrate potatoes by stomping them - barefooted - on top of a gunny sack until they are mashed but it is done in sub zero temperatures so the potatoes freeze dry as they are smashing them... see if you can find the little movie on it - part of Nature of things, etc. I think National Geographic had a film on it. Too cool!
