Salumi - question about casings & mold?

Hello - I recently received some high end cured meat products as a gift. The items come made in a natural casing that appears to have a good layer of mold on the outside. I am just curious to learn what is the proper way to remove the mold and or the casing, or should one bother to do so? I tried a small slice of one with the mold and the casing intact and the mold seemed to provide a flavor that overpowered everything inside, so I would like to learn the best way to deal with this. (should I just wash it under some water, or will I be ruining the flavor?)

    You remove the outer casing. You can also wash off the mold and eat the casing. But with dry cured products, some casings are to thick to eat.Some dry cured meats such as dry sausage have a very thin casing that's hard to peel off.

    The way to do it is to run the sausage under hot water for a few seconds. Wait 5 minutes and it will then easily peel off.

    You don't eat the mold. If you already did, just forget it but it's not a pleasant taste.Like you say it overpowered the salami.

    You won't ruin the flavor of anything with a casing by running it under water. The casing keeps the water from touching the cured meat.

    In fact, during the curing process, they are washed often.

    just remove the outer casing ....cut it away with a sharp knife....the meat inside is fine...it is just a porcess used to age the salami.....it wont kill you lol.....i wouldnt wash it ..may make the fat in the meat come to surface and than you will have a slimy mess
