Best way to cook Leeks?
Similar to previous question, have bought a nice big leek, and want to prepare as a veg for tonights dinner (lamb chops). Sorry if I sound dim, but as a bloke I never spent any time in the kitchen growing up. Anyway, do I just boil them for 30 minutes?

easy way, cut into two inch lengths and stand end on (upright ) in a tub. season with a little salt an pepper. blob a chunk of butter on the top. clingfilm and microwave for a couple of mins until they slightly soften. thats the simplest way to get the best taste of a leek.

What you want to do is to chop both the tips of the leek. The really dark green bit at the top and the hairy looking bit at the bottom.
Then chop into smallish pieces and wash really well. It's not unusual for leeks to have mud caked into the leaves so you need to give them a good wash or you'll end up with muddy bits in the food.
Drop the leek pieces into a saucepan, sprinkle a little cold water (like half a small glass) into it and cover. Put it on the penultimate heat level. What you want to do is to check them after 10 minutes to see if you need more water (if they are browning or look in danger of sticking to the bottom of the pan you need more water) but if you taste a bit and it's soft, just let it sweat the rest of the water off.
I really like creamy cheesy leeks which is really simple so I'll tell you what to do next. When they're done and there's no more water left, you pour some fresh cream over them. You could also use bechamel sauce.
Grate some nutmeg and black pepper onto that and add some salt.
Grate some parmesan or cheddar cheese into the mix and let it melt.
And that's it! You have a lovely creamy cheesy leek side which you can serve with anything you want!
Another good thing to do with leeks is leek and courgette soup.
It's so simple. It's leeks, courgettes, vegetable stock, boil it up and add a tub of philadelphia at the end and blend. It's so simple and good it can almost make you cry. Then you need to go for a jog to work off that Philadelphia. :)

30 minutes is probably too long - but check as you cook.
The most important thing though is to clean them properly before you prepare them. Leeks are grown with earth piled up around them, to encourage the white bit to grow rather than the inedible green bit, so you need to be sure you get all of that earth out. The easiest way is to slice the top green part, and the very bottom with the root bit, off completely and throw them away. Then slice halfway into the white part from the root upwards, and hold under a running cold tap while you riffle through the stalk to wash out the earth. Some people will then slice the whole thing, put into a bowl of cold water and stir around, to remove the rest of the earth, but that may be overkill. Certainly slice it up before you cook it though.

No dont boil it. Just chop it into slices after discarding the outer layer and both the ends put them into steam for about 15mins.

However you make with all the different ways listed above, just be sure to ..slice and WASH REALLY REA;;Y WELL as these are extremely sandy, and I am not talking a little granular sand, I mean like sandbox sand and a lot of it......I hope this helps..
