Marinade for Lamb Chops?
Going to grill them, was thinking of marinading in a virgin olive oil mixed with mint herbs?

if you really want to do the lamb with mint,as you mention, i would suggest cover in breadcrumbs- mixed with butter ,( to protect it) and cook in the oven( or a very low grill). mint, if in contact with direct heat ,goes very bitter. cook med rare. if you like well done lamb, eat your shoes.

first: you do not want to use mint as an herb in cooking lamb. I know mint goes well with lamb, but as a sweetened jelly, not as a savory herb.
second: you do not marinate in oil you marinate in an acid for tenderizing the meat. an acid is something like vinegar or citrus juice. you can add oil and herbs and such to the marinade , but not just oil. HOWEVER Lamb is so tender you do not need to marinate it.
third: If you want to add flavor you can grill it with a garlic rub or use some rosemary. but I suggest just using salt and pepper and grilling.

the traditional mint marinade is great but if you want to try something a bit different i would use a honey and mustard glaze - put 3 tablespoons of sugar into a pan and add a splash of vinegar, simmer gently until sugar dissolved then add 3/4 tablespoons of honey and 2 teaspoons of mustard and a pinch of dried mixed herbs. heat gently while stirring. drizzle over meat and grill. you can add more mustard and honey according to your taste and garlic if you like it. taste before putting on meat to get it right for you. This glaze is very tasty and gives a little kick!

rub the chops with a mixture of 1/2 tsp. garlic powder (NOT garlic salt), 1 Tbsp coarse (kosher) salt, and fresh ground black pepper to your taste.
Then grill... They will be delicious, and no marination necessary.
