What to eat that won't raise sugar levels?

My husband has been diagnosed with Type 2 Diabetes. He needs to lose weight but finds it difficult due to a back problem which makes it hard to exercise. The medication he is on also makes him very hungry.

I have been trying to work through what is good and what is bad etc., and work out a diet that looks after his diabetes and his weight loss. It's all very confusing. Does anyone here know of a good 'snack' that he can eat when he feels peckish. He seems to be ok during the day when he is busy at work etc., but he has trouble at night after his evening meal, the hunger pangs start.

Update:

Helpful answers from people who actually know something about the disease would be appreciated.

    Meg, where to start ?

As for exercise , this is a must. Ok, he has back problems . Here's a exercise that's made for him . Nordic Walking.

    Description

Nordic walking can be done year round in any climate and anywhere a person of any age or ability might otherwise walk without poles. It combines simplicity and accessibility of walking with simultaneous core and upper body conditioning similar to Nordic skiing. The result is a full-body walking workout that can burn significantly more calories without a change in perceived exertion or having to walk faster, due to the incorporation of many large core, and other upper-body muscles which comprise more than 90% of the body's total muscle mass and do work against resistance with each stride. 'Normal walking' utilizes less than 70% of muscle mass with full impact on the joints of the legs and feet.

Nordic Ski Walking produces up to a 46% increase in energy consumption compared to walking without poles.[1]

    Benefits

Compared to regular walking, Nordic walking involves applying force to the poles with each stride. Nordic walkers use more of their entire body (with greater intensity) and receive fitness building stimulation not as present in normal walking for the chest, lats, triceps, biceps, shoulder, abdominals, spinal and other core muscles. This extra muscle involvement leads to enhancements over ordinary walking at equal paces such as:

increased overall strength and endurance in the core muscles and the entire upper body

significant increases in heart rate at a given pace

    greater ease in climbing hills

burning more calories than in plain walking

improved balance and stability with use of the poles

significant un-weighting of hip, knee and ankle joints

effective weight bearing exercise - creates positive total body bone density-preserving stress

I use plain old wooden sticks, works well>

    Kewl!

Google it. It even shows videos to learn how if neccessary!!

For snack food here is a list of dozens that are free foods. Less than 5 gr. of carb per 100 grams. http://www.mendosa.com/freefoods.htm

Now to control diabetes here is the Holy Grail:

There are 4 key steps to controlling glucose levels :

    1) EXERCISE- Walking is fine but Nordic Walking is Great. Exercise also lowers Glucose levels , lowers Cholesterol and lowers Blood Pressure. Google it.Exercise is Non-Negotiable !!!Thats why it is Number 1 on the list.

    2) Knowledge- http://www.phlaunt.com/diabetes/index.ph%E2%80%A6 This is a great site for info

    3) Meds. Metformin to start. Never , ever take Actos or Avandia. They may kill you. Bone fractures, heart problems and what diabetics really don't need is that they change Bone Stem Cells to Fat Cells. Also never ever take Onglyza or Januvia . They can can inhibit the bodys immune system and let cancer spread.

    4) Diet- A low carb diet is in order. I can't count carbs so I use Mendosa's Glycemic Index Diet. Great for the whole family. http://www.mendosa.com/gilists.htm

My favorite snacks are home made beef jerky, celery sticks with peanutbutter, a small handful of peanuts. Pork skins with hot sauce, a small bowl of Veg. soup or Chili.

    Take care

Here are some snacks that don't raise my blood sugar (very much):

-celery and cream cheese (full fat)

-two servings of salted tree nuts (walnuts, pecans, almonds, macadamias)

-cheese "crackers" (slice some cheddar fairly thin, place cheddar on a large sheet of parchment paper in the microwave, cook for about a minute until the cheese stops sizzling - the 'fried' cheese forms a hard cracker that you can put deli meat or cream cheese on)

-homemade coleslaw (no sugar - just mayonnaise, onion, garlic powder, and a little vinegar)

-pork rinds (believe they are called 'scratchings' in the UK)

    -jerky or pepperoni sticks

in case you have a glucose point over a hundred twenty five mg/dL or 7 mmol/L a banana isn't stable very in many cases. confident, bananas have fairly some potassium and iron, yet additionally they have load of sugar spike means for some human beings. i don't even consume some slices of banana in fruit salad with out spiking. actually, all gentle candy end result could be eaten in intense small quantities. a million/2 cup optimal in keeping with meal or snack.
