I have a great recipe that I am making tonight, actually. It's super healthy and perfect for cold weather. It's also great because it's a budget friendly meal. It's called ratatouille stew. Trust me, it's delicious. We are super picky people, and not always crazy about stuff like this, but we love it. Here is the recipe:
Ingredients:
1 cup dried chick peas or garbanzo beans, sorted, rinsed
1 medium onion, chopped (1/2 cup)
2 cloves garlic, finely chopped
1 can (14 oz) chicken broth
1 jar (4.5 oz) sliced mushrooms, drained
1/4 teaspoon salt
1 large zucchini, sliced
1 medium red or green bell pepper, cut into pieces
1 teaspoon Italian seasoning
1 can (14.5 oz) diced tomatoes with Italian-style herbs, undrained
DIRECTIONS :
1. Soak chick peas in enough water to cover for at least 8 hours. Drain, discarding water.
2. In 3 1/2- to 4-quart slow cooker, mix chick peas, onion, garlic, broth, mushrooms and salt.
3. Cover; cook on Low heat setting 10 to 12 hours.
*I agree with the review about adding more broth. It dries a bit quickly.

The Ingredients.
--11 oz jar of apricot preserves
--1 t dried minced onion flakes
--1 T dijon mustard
--1 T soy sauce (La Choy and Tamari wheat free are gluten free)
--1/4 t ginger
--1/4 to 1/2 t red chili flakes (optional)
--6 chicken thighs or equivalent body parts
The Directions.
--I used frozen thighs. Drop the chicken into your crockpot.
--in a small bowl, mix all the other stuff
--pour on top of the chicken
cover and cook on low for 6-8 hours, high for 4-6--if your chicken isn't frozen, your dinner will cook faster.
serve with white or brown rice and veggies.
