A pickpocket, as its name indicates, nicks things from pockets, especially purses, wallets, or watches from wrists. They usually operate in crowded places. They want money or possessions and not sex.
Peeping toms are mostly men who secretly watch, or stalk women when they are undressing or doing something else where they might be naked or semi-naked. They also secretly watch couples in the act. They need this for their arousal.

A pickpocket uses manual dexterity to enrich himself.
A peeping Tom is concerned not with material gain but with satisfying his voyeuristic sexual needs.
The pickpocket steals something tangible from use, usually for resale (unless it be money he can use directly).
The peeping Tom violates your privacy.
The former is a thief, the latter a pervert. The only thing they have in common is stealth.

It is very interesting that your definition of a peeping tom indicates that you believe voyeurs are always men.
A voyeur is a man who likes to spy on women in secret.
You, on the other hand, are a man who likes to think about men who spy on women in secret.
And you just told everybody.
