How much tapioca starch should I use to substitute for cornstarch?
I'm making blueberry pie that calls for cornstarch, but I'd rather use tapioca starch. What's the exchange ratio? I read one place that it's 1 tablespoon cornstarch to 2 tablespoons tapioca starch, but another source said 2 tablespoons cornstarch to 1 tablespoon tapioca starch.

1 tablespoon cornstarch + 3 tablespoon tapioca

Hi Mtngigi is right - Tapioca is made from the Cassava root and Corn Starch is made from Corn. Both are gluton free which is great for people who suffer from wheat allergies. For thickening in my meal cooking I prefer to use corn starch ie: gravies and sauces but I like tapioca in my sweet deserts. My guy loves topioca pudding and I couldn't find recipes for it so I was doing a whack of research on it. Since then I have been experimenting with using it to thicken other deserts and puddings and it is great.
