Recipe for easy to make, traditional Vietnamese dish (Not Pho, Banh Xeo or Spring Rolls)?
Next month, a fellow student and I have to prepare some food for our Viet language class. It should be traditional, easy to make and serve 16 people. A link to the recipe would be very nice.

Ingredients :
------------------
5 1/3 lbs chicken (cubed)
2 2/3 tablespoons soy sauce
5 1/3 teaspoons fish sauce
1 1/3 teaspoons salt
2 2/3 teaspoons sugar
2 2/3 teaspoons sesame oil
2 2/3 tablespoons oyster sauce
2 2/3 to taste black pepper (to taste)
8 garlic cloves (finely chopped)
2 2/3 teaspoons olive oil
5 1/3 medium shallots (chopped)
2 2/3 cups straw mushroom (chopped)
16 large dried Chinese mushrooms (soaked and chopped)
2 2/3 tablespoons cornstarch
1 1/3 cups water
5 1/3 cups rice
5 1/3 tablespoons olive oil
5 1/3 medium shallots (finely chopped)
8 garlic cloves (finely chopped)
8 cups chicken stock
Directions :
----------------
1.-
Combine chicken with soy sauce, fish sauce, salt, sugar, sesame oil, oyster sauce, black pepper and garlic.
2.-
Heat oil in pan and add chopped shallots.
3.-
Add chicken mixture and fry until completely cooked about 10 minutes.
4.-
Add both types of mushrooms and stir.
5.-
Combine cornstarch with water and add to the pot.
6.-
Cook 5 minutes and set aside.
7.-
Heat oil in large pot.
8.-
Add shallots and garlic.
9.-
Fry for 5 minutes.
10.-
Add rice and fry for 5 minutes.
11.-
Add broth.
12.-
Stir once, cover, reduce heat to medium simmer for 20 minutes.
13.-
Add chicken on top and bring back to a simmer.
14.-
Serve.

You could search for "xoi" in google.com or "cha gio". There're plenty of recipe but I forgot them for right now.
